Concept: Artificial Organisms That Wiggle As You Eat Them

Artist Minsu Kim introduces synthetic biology to contemporary gastronomy.

If you go to the right restaurant, you can eat shrimp or octopus that’s still alive and moving, but that’s not to everyone’s taste. Minsu Kim, a student at the Royal College of Art, has a more refined idea. Inspired by synthetic bio projects like this artificial jellyfish powered by cells from a rat’s heart, Kim envisions a custom-engineered living meal that waves, wriggles, and inflates like an alien organism.

I would eat that.
